Set within Aimsir, our elegantly understated, Scandinavian-style restaurant, the Summer Soirées bring together two one-night-only events designed to celebrate the very best of the season. Inside, bold, dramatic interiors give way to expansive garden views through floor-to-ceiling glass. The restaurant offers gorgeous views of Dove Square, where soft light lingers well into the evening and the estate gardens hum gently in the background.

Let the briny breeze of the Atlantic inspire you as we dive deep into the treasures of the ocean. Fish Night opens with a lively oyster-shucking demonstration and an intimate, hands-on masterclass with Head Chef Sean Smith, where you’ll learn the delicate craft of preparing oysters and ceviche — an incredible immersion in flavour, freshness and finesse.
The menu that follows is a true parade of the sea’s most prized delicacies — gleaming slices of bluefin tuna, delicate pearls of caviar, and a series of courses that capture the beauty and complexity of the ocean. Expect technique, elegance, and storytelling in every bite.
The evening winds down with a thoughtfully chosen cheese plate — a final savoury note to round out the salt-kissed symphony.

The Spanish Feast — Friday 27th June
On this sultry June evening, the warmth of Spain comes alive at Aimsir. The menu is a vibrant homage to Mediterranean life — full of soul, simplicity, and sun-drenched ingredients.
This evening will feature a masterclass in the carving of one of the world’s finest hams, served alongside a guided tasting and storytelling experience centred on small producers and the exceptional Spanish ingredients they supply to Cliff at Lyons. It’s a celebration not just of flavour — but of craft, heritage, and passion.
You’ll begin with crusty breads and golden olive oil, moving through glistening anchovies brightened by garlic mayo, and into tender bites of rosti potato paired with pata negra and shavings of manchego.
Razor clams with pomegranate, yoghurt and seaweed follow — light, briny, and refreshing — before giving way to a richly layered main of salted cod, lardo, cockles and mussels bathed in sherry sauce. And to close: warm, crisp churros with a silken pot of chocolate.
It’s a journey through Andalusian markets, seaside bistros, and long Spanish evenings — without ever leaving the lush fields of Kildare.
