Celebrating what can be sown and harvested, fished and foraged on the island of Ireland, Aimsir is a passionate advocate for an authentic range of ingredients used in a sophisticated and inventive way.
Cornwall-born chef Jordan Bailey and Danish front of house manager Majken Bech Christensen have been exploring the food producers and ingredients of their newly adopted home. Jordan was previously head chef at 3 star Michelin Maaemo where the two met, and a key member of 2 star Michelin Restaurant Sat Bains, whilst Majken honed her skills at 2 star Michelin Henne Kirkeby Kro.
These two young newly-weds – in their twenties, one from Denmark, one from Cornwall, now making a home together in Ireland – are celebrating a larder that is new to both of them, and indulging in the excitement and adventure of discovering this bounty together.
Aimsir, our elegant two-Michelin starred restaurant at Cliff at Lyons, now offers an Aimsir Lounge Experience. The chic bar with indoor and outdoor seating overlooking the beautiful gardens opens from 3:00pm, Wednesday to Saturday, Aimsir Lounge is a unique opportunity to experience some of the magic of Aimsir in the lush countryside setting of Cliff at Lyons.
Chef Jordan Bailey’s clever and delicious menu of snacks and bites will change regularly, according to what’s growing on-site and available from Aimsir’s exceptional family of Irish suppliers.
The heart of what Aimsir does is to champion the very best of what Ireland has to offer, so to accompany the Aimsir Lounge snacks selection enjoy one of Aimsir’s signature all-Irish cocktails, showcasing the versatility, creativity and, above all, quality of drinks produced on the island.
The snacks change daily or weekly but the blueprint stays the same — garden treats, house made breads or crackers and charcuterie with foraged pickles and preserves and excellent Irish cheese for €18.50 from Wednesday to Saturday.

Aimsir Lunch Overnight Experience
This is a special opportunity for dedicated food lovers keen to experience the two Michelin Aimsir Restaurant. Discover chef Jordan Bailey’s contemporary take on exceptional Irish ingredients with a relaxed Friday night stay at Cliff at Lyons and a new Saturday lunch offering the full Aimsir tasting menu. This new experience is available to book in the form of a Friday overnight package.

This new Saturday lunch experience is available for €865 for two people sharing to include a mini-spa treatment each, three-course dinner in Trellis on Friday night, an overnight stay with full breakfast in a luxury room at Cliff at Lyons and the 18-course lunch for two in Aimsir Restaurant. The package can also be booked for four people also, including two bedrooms and a table for four in Aimsir.
